How Do You Create This Summer Bliss Masterpiece?

Traditionally, Summer Berry Pudding made with bread and ripe berries soaked in a sugar syrup and constructed in a pudding bowl. Once the dessert is chilled, it's turned onto a serving plate, then cut to serve.

Tips for Following Our Recipe:

Preferably using fresh ripe berries is best, however you can use frozen or a combination of both. You can use blackberries, strawberries, raspberries and blue berries, but you could also use cherries, redcurrants, blackcurrants and more!

Be sure to thaw and drain frozen berries before you use them as they can result in a more wet pudding if you use them frozen. Serve this delicious beauty with fresh whipped cream, custard or ice cream, the choice is yours! You can add a mint leave to spice it up a bit!

PREPARATION

  • 1 Prepare the Aeroplane Original Raspberry Flavoured Jelly according to pack instructions, and allow to cool slightly, but not to set. Using 7 slices bread, soak each well in the liquid jelly, and line a 5L Pyrex dish or basin, making sure the bread covers any gaps.
  • 2 Pour in the mixed berries, then cover with the remaining 2 pieces of bread soaked in jelly. Carefully pour any extra jelly liquid over the top, press down gently, cover and refrigerate until set (four hours)
  • 3 Turn out to serve, then top with additional berries, mint leaves or a sprig of holly for Christmas.
