PREPARATION
- 1 Combine the blueberries, water and orange juice in a small saucepan and bring to a gentle boil for 3-5 minutes, or until thickened slightly. Remove from heat, and avoiding steam stir in contents of jelly sachet until dissolved. Divide mixture evenly between 4-6 serving pots and refrigerate until set (minimum 1 hour)
- 2 Combine coconut milk, vanilla extract, 2 tbsp maple syrup, 4 tbsp of peanut butter and cinnamon in a jug. Using a stick blender, blend to combine well. Add chia seeds and pulse to combine. Cover jug and refrigerate until jelly mixture is set.
- 3 Once set, stir chia pudding mixture to redistribute seeds, then spoon evenly between serving pots.
- 4 To serve, combine remaining 2 tbsp of peanut butter and 1 tbsp maple syrup, stirring well. Top pots with extra blueberries and peanut butter mix.
