Frozen Yoghurt-Berry Iced Treat

PREPARATION

  • 1 Combine jelly crystals and boiling water, stirring until well dissolved. Allow to cool completely to room temperature but do not allow to set.
  • 2 In the bowl of a food processor, add the frozen berries, yoghurt and syrup. Process until combined. While processing add the jelly mixture and continue for approximately three more minutes. Or until a frosty, creamy consistency is formed.
  • 3 Serve immediately with additional fresh fruit or transfer to a container and freeze for approximately 1 hour.
  • 4 Remove the frozen yoghurt 10 minutes prior to serving to ensure it is soft enough to scoop. Serve with optional extra berries.

Hints

This yoghurt mix can then be topped with fresh fruit, trail mix, nuts and seeds. Use as a creamy accompaniment to cakes and pies in place of cream.
