Turn plain rice ring cookies into little circles of bliss simply by adding slices of our original Blackcurrant Jelly and a generous dollop of cream.
- 1 Dissolve Aeroplane Natural Blackcurrant Jelly Crystals in 300 mL boiling water, and then pour into a small shallow dish. Place jelly in freezer for 30 minutes or until set but not frozen.
- 2 Once Jelly has set, remove from freezer and dish. Cut into thick slices to fit cookies.
- 3 Flat side facing up, top half of the cookies with a slice of Blackcurrant Jelly and a dollop (1 tsp) whipped cream. Top the cream with a second cookie round side facing up.
- 4 Cover with plastic and serve within an hour or two of making them.
Best on day made. Do not re-freeze.
