A nostalgic and tasty slice that everyone will love.
- 1 Line (25cm x 16cm x 3 cm) lamington pan with baking paper allowing a 5 cm overhang. Place biscuits bottom side up, evenly over the base of prepared pan. Ensure a snug fit to minimise movement and be aware of placement of biscuits for ease of decoration.
- 2 In a medium bowl combine one pack of raspberry jelly crystals and 1 cup (250mL) boiling water, stir well until dissolved. Add sweetened condensed milk, stirring until smooth. Gently pour over the biscuit base and refrigerate for 1 hour or until set.
- 3 In a second bowl, prepare second packet of raspberry jelly crystals according to packet instructions. Allow to cool completely (Note: if jelly is too warm when poured over filling it will melt the milk filling). Gently pour raspberry jelly over set filling and refrigerate for a further 1 – 2 hours or until set firm.
- 4 Following the line of the biscuit base, place two lines of mini mallows over jelly, down the longer sides of the biscuits, end to end, allowing space between biscuits for slicing. Sprinkle coconut over and using the biscuits as a guide, cut into VoVo-like jelly slices.
