Lite Blueberry Jelly Protein Pots

PREPARATION

  • 1 Combine the blueberries, water and orange juice in a small saucepan and bring to a gentle boil for 3-5 minutes, or until thickened slightly. Remove from heat, and avoiding steam stir in contents of jelly sachet until dissolved. Divide mixture evenly between 4-6 serving pots and refrigerate until set (minimum 1 hour)
  • 2 Combine coconut milk, vanilla extract, 2 tbsp maple syrup, 4 tbsp of peanut butter and cinnamon in a jug. Using a stick blender, blend to combine well. Add chia seeds and pulse to combine. Cover jug and refrigerate until jelly mixture is set.
  • 3 Once set, stir chia pudding mixture to redistribute seeds, then spoon evenly between serving pots.
  • 4 To serve, combine remaining 2 tbsp of peanut butter and 1 tbsp maple syrup, stirring well. Top pots with extra blueberries and peanut butter mix.

Try making these pots with a different Aeroplane Jelly Lite flavour and fruit of choice.
Try adding some toasted coconut for another delicious topping.
Coconut milk can be substituted with any milk or milk alternative.
Peanut butter can be substituted for another nut butter of choice.
