Strawberry Lamington Trifle

PREPARATION

  • 1 In a small bowl, mix ¾ cup of boiling water and 1 packet of jelly crystals. Stir really well until completely dissolved. Set aside to cool.
  • 2 In another bowl, mix 1 cup of boiling water and 1 packet of jelly crystals. Stir well to completely dissolve, then add 200ml cold water. Pour into a trifle dish. Place in the fridge for 1 hour or the freezer for 15-20 minutes.
  • 3 Once the first bowl of jelly is cool and just starting to hit the jiggle stage, start on the mousse. In a large bowl, beat the cream to medium peaks, and set half aside in the fridge. Add the first smaller portion of jelly to the other half and beat for another 30 seconds until well combined.
  • 4 Gently spread the mousse over the top of the set jelly in the trifle dish. Let it set in the fridge another 15 minutes.
  • 5 Finish the trifle off by layering, in the order, 1/4 of the strawberries, lamingtons, another 1/4 of strawberries, the set-aside whipped cream, remaining strawberries, and toasted coconut flakes. Give it another hour in the fridge before serving.
