PREPARATION
- 1 Line a loaf tin with baking paper.
- 2 Tip jelly crystals into a medium bowl and add 2/3 cup sweetened condensed milk. Mix well then microwave for 1 minute to dissolve some crystals. Add 1 1/2 cups coconut and stir well.
- 3 In another bowl, combine remaining condensed milk, coconut and icing sugar. Stir well.
- 4 Tip one of the mixtures into the loaf tin and press out until level (lightly wet hands make this really simple). Top with the other mixture and level out. Chill in the fridge for 1-2 hours then cut into squares and serve.
