A tropical delight, cool and creamy pineapple flavoured coconut jelly with tangy fresh pineapple.
- 1 Combine Pineapple Jelly crystals and boiling water in a medium bowl. Stir until fully dissolved. Cover and refrigerate until the consistency of a thick syrup (1-2 hours). Gradually pour in coconut milk and using a fork whisk until combined.
- 2 Pour Pineapple Pina Colada jelly mixture into 4 serving glasses or moulds and refrigerate until set.
- 3 Top with fresh pineapple to serve.
Be sure to use fresh pineapple as a garnish only as fresh pineapple will inhibit the setting of jelly if added to the jelly mixture.
