PREPARATION
- 1 Prepare Aeroplane Sourz Jelly as per back of pack instructions using 100 mL less cold water and place in the fridge until soft set (approximately 1 hour).
- 2 If using store-bought cupcakes remove icing. Cut a 1cm wide x 1cm deep circle out of the middle of each cupcake. Discard cake scraps. Spoon 2 tsp of soft set jelly into cavity and place cupcakes back in fridge to set jelly firm.
- 3 Into a microwave safe bowl add ⅓ cup of boiling water and whisk in the Aeroplane Original Berry Blue jelly crystals. Microwave for 30 seconds on HIGH to ensure crystals are fully dissolved. Set aside to cool to room temperature.
- 4 Place cream cheese into the bowl of a stand mixer with whisk attachment. Whisk on LOW speed, gradually increasing to HIGH, scraping down the bowl occasionally, until smooth and creamy.
- 5 Reduce speed to LOW and carefully pour in the cooled berry blue jelly. Whisk until fully incorporated and smooth. Refrigerate mixture for 10 minutes to set firm.
- 6 Scoop set cream cheese frosting into a piping bag with a small star nozzle and pipe small blobs to create furry monster hair. For another look, use a second piping bag and snip the end off to create a small hole. Use this to create spaghetti like monster hair.
- 7 You can use store bought googly eyes, fake teeth, cookies etc to create a “realistic” monster.

Tips:
• If making cupcakes from scratch, use a 12 x ⅓ cup capacity muffin pan, with large patty pan papers. Allow cupcakes to cool before removing centre.
