PREPARATION
- 1 Lightly and evenly grease a slice pan (25 cm x 15cm x 3 cm) with oil spray.
- 2 Combine jelly crystals and boiling water in a medium microwave safe bowl. Stir with a fork to dissolve crystals well. To ensure the jelly crystals are completely dissolved, microwave for 45 seconds and stir again.
- 3 Add marshmallows (if using jumbo marshmallows tear in half first) to jelly mixture and return to microwave for 45 seconds to 1 minute, or until marshmallows are puffed and slightly melted. Marshmallows will puff up quickly, stir them into liquid and continue.
- 4 Whisk quickly to completely combine melted marshmallow with jelly mixture. Pour mixture into prepared pan and refrigerate for 45 minutes or until set firm. Note: creamy marshmallow layer will rise to the top as the mixture sets.
- 5 Use a spatula to loosen all edges. Starting at one end, tightly roll jelly inwards until you reach the other end of the pan.
- 6 Once rolled, transfer to a clean chopping board with the tail tucked underneath. Use a sharp, straight edged knife to cut into 2 cm thick pieces.
- 7 Serve immediately or cover and refrigerate until ready to use.
