PREPARATION
- 1 Combine 2 tbsp (40 g) of the jelly crystals and gelatine powder in a medium bowl. Set aside remaining crystals in a small bowl for later use.
- 2 Carefully add the boiling water to the jelly and gelatine mixture and stir until completely dissolved. Leave to cool for 10 minutes.
- 3 Using a small pipet, squeeze jelly mixture into your silicon snake moulds until full. Refrigerate for 1-2 hours or until set firm.
- 4 Once set, carefully push the jelly snakes out of the moulds to reveal a perfect snake shape.
- 5 To serve; dip snakes into reserved jelly crystals for an extra sour tang.

Tips:
• If you do not have a silicon snake mould. Simply pour jelly into a shallow slice tray. Once set, cut into lengths resembling snakes.
• Store in an airtight container in the fridge.
